Chewy Ginger Cookies

The San Antonio Modern Quilt Guild had their cookie exchange this past weekend. I had so much fun seeing everyone, eating delicious food, and marveling at all the cookies! Here is the cookie recipe I shared with everyone. They are one of my favorite Christmastime cookie! The blend of cinnamon, ginger, and clove is perfect!



Chewy Ginger Spice Cookies

 2 cups flour

2 tsp baking soda

1 tsp cinnamon

1/2 tsp ginger

1/2 tsp ground cloves

1 cup sugar

1 egg, beaten

3/4 cup shortening

1/4 cup molasses

 

Mix all the dry ingredients together, then add in the wet ingredients. Using a cookie scoop, form into balls, roll in granulated sugar to coat, and place on an ungreased cookie sheet. You’ll want to cook these at 350F for 8-11 minutes.

I always pull mine out as soon as they start getting crackly on top. You might feel like they aren’t cooked enough but they’ll cook a bit more and harden slightly as they cool. I love these because they remind me of the ginger snaps I always ate at my grandparents house, but in a moist, chewy kind of way!

Here they are all packaged and ready to go. I ran out of steam that day and just couldn’t do something super fancy for the packaging. I did print up some cute little stickers on my Silhouette though!
